It’s all about the sun-dried peppers

Hand picked in mid August, the red peppers are sorted to eliminate the damaged peppers and then hung vertically under the hot sun of the Cap Bon in Tunisia . During this long process of drying, the peppers get dehydrated slowly and continue their maturation which give them unique flavors.

How to enjoy Harissa ?
