Roasted Veggies with Yogurt Harissa Sauce

These roasted veggies with yogurt harissa sauce will do the trick! Have you tried harissa before? Harissa is a smoky, spicy pepper sauce from North Africa. Try it with roasted veggies, stir it into soups and sauces, use it as a spread, and use it for any foods that are screaming for a spicy kick.⁣

– 6-10 carrots⁣
– 1 bunch asparagus⁣
– Salt and pepper⁣
– 1/2 – 1 tablespoon oil⁣
– 1/2 cup plain vegan yogurt⁣
– 1/2 tablespoon harissa paste (I used @kartago_harissa). +/- more depending on how spicy you like it⁣
– Lemon slices, pistachios⁣

1. Preheat oven to 400F degrees⁣
2. On a large baking sheet, add carrots and asparagus. Drizzle oil over the top. Add salt and pepper. Toss together to coat.⁣
3. Place in the oven for 30-45 minutes. Cooking time will depend on the size of your veggies. Check halfway through to see if you need to remove asparagus from the oven. Return the carrots back to the oven as they will need the entire time to roast.⁣
4. In a small bowl, mix together vegan yogurt and harissa.⁣
5. Remove veggies from the oven when done. Serve on plates with harissa yogurt.⁣
6. Squeeze lemon over the top and top with chopped pistachios. Enjoy!⁣
